I really like the Addo Elephant National Park because it's the only really interesting thing when coming from Cape Town, further south the climate is too cold and the private reserves are less authentic. In this National Park, elephants live in their natural ecosystem, and it's not expensive as well (around 20 euros per person per day). If you have the chance to go to Kruger, further north in the country, it is THE unmissable park.
The guides are well trained, the safaris and accommodation around the park is available to all budgets. I slept in a youth hostel at the entrance to the park on my first night, to be able to get to the opening of the "gate", you have more chance to see the animals at that time. We stopped at the Main Camp at midday for check in to sleep on-site, the site and toilets are well-run (30 euros for a 2-man tent). The camp is very well equipped, I made the most of the afternoon (too hot to see the animals) by bathing in the swimming pool.
The evening afterwards I had dinner at the restaurant, I saw lions drink at the watering hole underneath me, the camp has constructed a superb observation platform! In the morning we went on a morning drive with the rangers. The camp is in the heart of the forest, you are sure to cross paths with animals, not only to see elephants, but also lions, buffalo, rhinoceros, leopars...
